1. Cook the Mafaldine

Bring a large pot of salted water to a boil. Add the mafaldine pasta and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta.

2. Prepare the Sauce

In a large skillet, heat the olive oil over medium heat. Add the crème fraîche and stir in the grated Parmesan cheese until melted and creamy. If the sauce is too thick, gradually add reserved pasta water until desired consistency is reached.

3. Combine Pasta and Sauce

Add the drained mafaldine to the skillet with the sauce. Toss well to coat the pasta evenly. Season with salt and freshly ground black pepper to taste.

4. Finish with Truffle

Using a truffle slicer or a sharp knife, shave the fresh Burgundy truffle over the pasta just before serving. Sprinkle with Grana Padano cheese and serve immediately.
