Prepare the Strawberries

Wash the strawberries thoroughly, remove the stems, and slice them in half.

Infuse the Vodka

In a large glass jar, combine the sliced strawberries and vodka. Seal the jar tightly and let it sit in a cool, dark place for 3-5 days to allow the flavors to infuse.

Make the Simple Syrup

In a saucepan, combine the water and granulated sugar. Heat over medium heat, stirring until the sugar is fully dissolved. Remove from heat and let it cool.

Combine and Strain

After the infusion period, strain the strawberry-vodka mixture through a fine mesh strainer or cheesecloth into a clean bottle. Discard the solids.

Add Simple Syrup and Lemon Zest

Add the cooled simple syrup and lemon zest to the strained strawberry vodka. Stir well to combine.

Bottle and Chill

Transfer the strawberrycello to a clean bottle and seal it. Refrigerate for at least 24 hours before serving to let the flavors meld.
