Preparation

    Prepare the Potatoes

    Peel and cube the purple Peruvian potatoes. Place them in a pot of salted water and bring to a boil. Cook until tender, about 15-20 minutes. Drain and return to pot.

    Mash the Potatoes

    Add butter, milk, garlic powder, and salt to the drained potatoes. Mash until smooth and creamy. Set aside and keep warm.

Grilling

    Grill the Lamb

    Preheat the grill to medium-high heat. Season the lamb porterhouse with salt and black pepper. Grill for about 4-5 minutes on each side for medium-rare, or until desired doneness is reached. Let rest for a few minutes.

    Grill the Broccolini

    Toss the broccolini with olive oil, salt, and pepper. Grill for about 3-4 minutes until tender and slightly charred.

Plating

    Serve the Dish

    On a plate, add a generous scoop of mashed purple Peruvian potatoes. Place the grilled lamb porterhouse next to the potatoes and arrange the grilled broccolini on the side. Drizzle demi glace over the lamb and serve immediately.
