Cook the Farro
In a medium saucepan, bring 3 cups of water to a boil. Add the farro and a pinch of salt. Reduce heat, cover, and simmer for about 30 minutes or until tender. Drain any excess water and set aside to cool.

Blanch the Green Beans
While the farro is cooking, bring another pot of salted water to a boil. Add the green beans and cook for about 3-4 minutes until bright green and tender-crisp. Drain and immediately transfer to an ice bath to stop cooking. Once cooled, drain and set aside.

Combine Salad Ingredients
In a large bowl, combine the cooked farro, blanched green beans, cherry tomatoes, frisée, and fresh mint.

Dress the Salad
In a small bowl, whisk together the olive oil, lemon juice, salt, and black pepper. Pour the dressing over the salad and toss gently to combine.

Add Mozzarella
Gently fold in the torn fresh mozzarella pieces into the salad.

Serve
Serve the salad chilled or at room temperature. Enjoy!
