Rinse the strawberries under cool running water. Remove the green tops (hulling) and then slice the strawberries into halves or quarters, depending on their size.

Place the sliced strawberries in a bowl and sprinkle with 1/4 cup of the granulated sugar. Toss the strawberries gently to coat them with sugar. Let them sit for about 15 minutes to release their juices.

Roll the lemons on a hard surface to soften them, then cut them in half. Use a citrus juicer to extract the juice from the lemons. Strain the juice to remove seeds and pulp if desired.

In a saucepan, combine 1 cup of water with the remaining 3/4 cup of granulated sugar. Heat over medium heat, stirring until the sugar is completely dissolved. This creates a simple syrup.
