Jollof Rice

    Prepare the Rice

    In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.

    Add Aromatics

    Stir in the minced garlic and ginger, and cook for another minute until fragrant.

    Incorporate Tomato Base

    Add the tomato paste, crushed tomatoes, and stir well. Cook for about 5 minutes.

    Cook the Rice

    Add the rice, vegetable broth, bay leaves, thyme, cayenne pepper, and salt. Bring to a boil, then reduce heat to low, cover, and simmer for 20-25 minutes until the rice is tender and the liquid is absorbed.

    Fluff the Rice

    Remove from heat, discard bay leaves, and fluff the rice with a fork.

Chicken

    Season the Chicken

    In a bowl, combine smoked paprika, black pepper, and salt. Rub this mixture all over the chicken thighs.

    In a skillet, heat olive oil over medium-high heat. Add the chicken thighs and cook for about 5-7 minutes on each side until golden brown and cooked through. Use a meat thermometer to ensure they reach an internal temperature of 165°F (75°C).

Sweet Potatoes

    Prepare the Sweet Potatoes

    Preheat the oven to 425°F (220°C). Toss the cubed sweet potatoes with olive oil, cayenne pepper, and salt in a bowl.

    Roast the Sweet Potatoes

    Spread the sweet potatoes on a baking sheet in a single layer and roast for 25-30 minutes until they are tender and charred, flipping halfway through.

    In a serving bowl, layer the jollof rice, top with the cooked chicken thighs, roasted sweet potatoes, pickled hot peppers, diced tomatoes, and sprinkle with sliced green onions.
