Cooking Rice

Prepare the Rice
Rinse the white rice under cold water until the water runs clear. In a medium saucepan, combine 1 cup of white rice with 2 cups of water. Bring to a boil, then reduce to low heat, cover, and simmer for 18-20 minutes or until the rice is tender and the water is absorbed.
Cooking Chicken

Cook the Chicken Breast
While the rice is cooking, season the chicken breast with salt and black pepper. Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the chicken breast and cook for 6-7 minutes on each side, or until cooked through and no longer pink in the center. Remove from heat.

Build the Bowl
In a serving bowl, start with a base of the cooked white rice. Layer the spicy buffalo chicken on top of the rice. Then add diced tomatoes, pickled hot peppers, and sprinkle Monterrey Jack cheese over the top.

Finish by adding a handful of tortilla chips on the side and garnish with chopped green onions.
