Dough Preparation

    Mix Dry Ingredients

    In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, instant yeast, and salt until well combined.

    Warm Milk and Butter

    In a small saucepan, heat the whole milk and unsalted butter over medium heat until the butter is melted and the mixture is warm (not hot). Remove from heat.

    Combine Ingredients

    Add the warm milk mixture to the dry ingredients. Then, add the large egg. Mix until a dough forms.

    Knead the Dough

    Turn the dough out onto a lightly floured surface and knead for about 5 minutes until smooth and elastic.

    Let the Dough Rise

    Place the dough in a greased bowl, cover with a clean kitchen towel, and let it rise in a warm place for about 1 hour, or until doubled in size.

Frying and Serving

    Heat the Oil

    In a large, deep pot, heat the vegetable oil to 350°F (175°C). Use a thermometer to ensure the temperature is accurate.

    Shape the Beignets

    Once the dough has risen, punch it down and turn it out onto a floured surface. Roll it out to about ½ inch thick and cut into squares (about 2x2 inches).

    Fry the Beignets

    Carefully drop the squares into the hot oil, a few at a time, and fry until golden brown, about 2-3 minutes per side. Use a slotted spoon to remove them and drain on paper towels.

    Dust with Powdered Sugar

    While still warm, dust the fried beignets generously with powdered sugar.
