Cooking the Pasta

Cook the Pasta
In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside.
Preparing the Vegetables

Sauté the Vegetables
In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.

Add the Vegetables
Add bell peppers, zucchini, cherry tomatoes, carrots, and broccoli to the skillet. Sauté for about 5-7 minutes until the vegetables are tender but still crisp.

Add Spinach
Stir in the fresh spinach and cook for another 2-3 minutes until wilted.
Combining

Combine Pasta and Sauce
Add the cooked pasta to the skillet with the sautéed vegetables. Toss everything together to combine well.

Season
Season with salt and black pepper to taste, and sprinkle the grated Parmesan cheese over the top. Toss again to mix.

Serve warm, garnished with extra Parmesan cheese if desired.
