Cool the Tea
After steeping, remove the tea bags and allow the sweet tea to cool to room temperature.

Ferment
Cover the jar with a clean cloth or coffee filter secured with a rubber band. Let it sit at room temperature, away from direct sunlight, for 7-14 days, tasting periodically.

Once the kombucha has reached your desired level of fermentation, remove the SCOBY and set it aside. If desired, add your choice of flavoring ingredients (ginger, lemon juice, berries, or herbs) to the kombucha.

Using a funnel, pour the flavored kombucha into clean bottles, leaving about an inch of headspace at the top.

Seal the bottles tightly and let them sit at room temperature for an additional 3-7 days to carbonate. Check daily and refrigerate when desired fizziness is achieved.
