Preheat the Oven
Preheat your oven to 425°F (220°C). This high temperature is essential for achieving crispy potatoes.

Prepare the Potatoes
Wash and scrub the Kennebec potatoes thoroughly under cold water to remove any dirt. Pat them dry with a clean towel.

Cut the Potatoes
Cut the potatoes into even-sized wedges or cubes, approximately 1 inch thick. This ensures even cooking.

Coat the Potatoes
In a large mixing bowl, combine the cut potatoes, olive oil, salt, and black pepper. Toss well to ensure all pieces are evenly coated.

Mix the AM Seasoning
In a small bowl, mix together the garlic powder, onion powder, paprika, dried thyme, and dried rosemary.

Sprinkle the AM seasoning mixture over the coated potatoes and toss again until all wedges are evenly seasoned.

Roast the Potatoes
Spread the seasoned potatoes in a single layer on a baking sheet lined with parchment paper. Roast in the preheated oven for 30-35 minutes, flipping halfway through, until they are golden brown and crispy.
