Method

Preparation

  1. 1

    Preheat the Oven

Preheat the oven to 425°F (220°C). Grease four ramekins with butter and dust with flour to prevent sticking.

  2. 2

    Melt Chocolate and Butter

In a medium saucepan over low heat, melt the unsalted butter and bittersweet chocolate together, stirring until smooth. Remove from heat and let cool slightly.

  3. 3

    Mix Sugar and Eggs

In a mixing bowl, whisk together the granulated sugar, large eggs, and large egg yolks until the mixture is light and thick.

  4. 4

    Combine Mixtures

Gradually whisk the melted chocolate mixture into the egg mixture. Stir in the vanilla extract, flour, and a pinch of salt until just combined.

Baking

  1. 5

    Fill Ramekins

Pour the batter evenly into the prepared ramekins, filling them about 3/4 full.

  2. 6

    Bake the Cakes

Place the ramekins on a baking tray and bake in the preheated oven for 12 to 14 minutes, or until the edges are firm but the center is still soft.

Serving

  1. 7

    Cool and Serve

Remove the cakes from the oven and let them cool for 1 minute. Carefully invert each ramekin onto a plate. Serve immediately with a scoop of vanilla ice cream on top.
