    Prepare the Fries

    Wash and cut the potatoes into fries. Soak them in water for at least 30 minutes to remove excess starch.

    Cook the Fries

    Heat vegetable oil in a deep fryer or a large pot to 350°F (175°C). Fry the potatoes in batches until golden brown and crispy, about 5-7 minutes. Drain on paper towels and season with salt.

    Prepare the Patties

    Divide the ground beef into two equal portions and form into balls. Season with salt and black pepper.

    Smash the Patties

    Heat a cast-iron skillet or griddle over medium-high heat. Place the beef balls on the skillet and smash them down with a spatula to form thin patties. Cook for about 3 minutes on one side.

    Add Cheese

    Flip the patties and place 2 slices of white American cheese on each. Cook for an additional 2-3 minutes until the cheese is melted and the burgers are cooked to your desired doneness.

    Assemble the Burgers

    Toast the brioche buns on the skillet for a minute. On the bottom bun, layer lettuce, tomato (sliced), onion (sliced), and pickles. Place the cheesy patties on top and drizzle with Thousand Island dressing.

    Serve

    Top with the other half of the brioche bun and serve immediately alongside the fresh cut fries.
