Buffalo Chicken Sandwich

Preparation

Marinate the Chicken
In a bowl, soak the chicken breasts in buttermilk for at least 30 minutes to tenderize and flavor the meat.

Prepare the Breading
In a shallow dish, combine flour, cornstarch, salt, black pepper, and paprika.

Bread the Chicken
Remove the chicken from the buttermilk, allowing excess to drip off, and dredge in the flour mixture until fully coated.

Fry the Chicken
Heat vegetable oil in a deep skillet over medium-high heat. Fry the chicken for about 5-7 minutes on each side until golden brown and cooked through. Remove and drain on paper towels.

Toss in Buffalo Sauce
Once the chicken is cooked, toss it in Buffalo sauce until fully coated.

Prepare Sriracha Aioli
In a small bowl, mix mayonnaise and sriracha together until well combined.

Assemble the Sandwich
On a brioche bun, layer lettuce, the Buffalo chicken, bleu cheese crumbles, sliced tomato, and drizzle with sriracha aioli. Top with the other half of the bun.

Make Fresh Cut Fries
Cut potatoes into fries, soak in water for 30 minutes, then fry in hot oil until golden and crispy. Season with salt.
