    Marinate the Pork

    In a mixing bowl, combine the achiote paste, orange juice, salt, and black pepper. Add the thinly sliced heritage pork and coat well. Cover and refrigerate for at least 2 hours, preferably overnight.

    Prepare the Grill

    Preheat the grill to medium-high heat. Lightly oil the grill grates to prevent sticking.

    Grill the Pork

    Remove the pork from the marinade and grill for about 4-5 minutes on each side or until fully cooked and slightly charred. Let it rest for a few minutes before slicing it thinly.

    Grill the Pineapple

    Place the pineapple slices on the grill and cook for about 3-4 minutes on each side until caramelized and charred. Remove from the grill and chop into small pieces.

    Warm the Tortillas

    Heat the corn tortillas on the grill for about 30 seconds on each side until warm and pliable.

    Assemble the Tacos

    On each tortilla, layer sliced pork, diced onions, chopped cilantro, and grilled pineapple. Serve with red and green salsa on the side.

    Serve with French Fries

    Fry the French fries according to package instructions and serve alongside the tacos.
