Cooking Instructions

  1. 1

    Prepare the Pesto

In a food processor, combine basil leaves, Parmesan cheese, pine nuts, garlic, lemon juice, and olive oil. Blend until smooth. Season with salt and pepper to taste.

  2. 2

    Cook the Orzo

In a large pot, bring salted water to a boil. Add the orzo and cook according to package instructions until al dente. Drain and toss with a few tablespoons of the basil pesto.

  3. 3

    Grill the Asparagus

While the orzo is cooking, heat a grill pan over medium-high heat. Toss the asparagus with olive oil, salt, and pepper. Grill for about 5-7 minutes, turning occasionally, until tender and slightly charred.

  4. 4

    Pan-Seer the Salmon

Pat the salmon fillets dry with paper towels and season both sides with salt and pepper. In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the salmon, skin-side down, and cook for about 4-5 minutes until the skin is crispy. Flip and cook for another 3-4 minutes, or until cooked through.

  5. 5

    Serve

Plate the basil pesto orzo, top with the pan-seared salmon, and serve alongside the grilled asparagus.
