    Prepare the Chocolate Layers

    Melt the dark chocolate and butter together in a heatproof bowl over simmering water. Once melted, allow to cool slightly.

    Make the First Mousse Layer

    In a bowl, whip 200 ml of heavy cream until soft peaks form. In another bowl, beat 2 eggs and 100 g of granulated sugar until pale and fluffy. Fold in the melted dark chocolate mixture and then gently fold in the whipped cream. Pour this mixture into the prepared cake pan and refrigerate for 30 minutes.

    Make the Second Mousse Layer

    Repeat the process using the milk chocolate. Melt the milk chocolate, then whip another 100 ml of cream. Beat 1 egg with 50 g of sugar until fluffy, fold in the melted milk chocolate, then the whipped cream. Pour this layer over the first mousse and refrigerate for another 30 minutes.

    Make the Third Mousse Layer

    For the final layer, mix the remaining heavy cream with unsweetened cocoa powder. Beat 1 egg with the remaining sugar until fluffy, fold in the cocoa cream, and pour over the second mousse layer. Refrigerate for at least 2 hours or overnight.

    Serve the Cake

    Once set, carefully remove the cake from the pan. Optionally, garnish with chocolate shavings or whipped cream before serving.
