Fat Washing the Bourbon
Melt the unsalted butter in a small saucepan over low heat. Once melted, remove from heat and let cool slightly. Combine the melted butter with the Benchmark Bourbon in a glass jar. Seal and let sit at room temperature for 6-8 hours or overnight to allow the flavors to meld.

Chill and Strain
After the infusion period, place the jar in the freezer for about 1 hour until the butter solidifies. Once solid, strain the bourbon through a fine mesh sieve or cheesecloth to remove the butter fat, leaving you with a rich, buttery bourbon.

Mixing the Cocktail
In a mixing glass, combine the fat-washed bourbon, bitters, and simple syrup. Add ice and stir until well chilled.

Serving
Strain the mixture into a rocks glass filled with fresh ice. Garnish with a twist of orange peel, expressing the oils over the drink before placing it in the glass.
