Make the Raspberry Sorbet
In a saucepan, combine the water and sugar over medium heat, stirring until the sugar is dissolved. Add the fresh raspberries and bring to a simmer. Cook for about 5 minutes until the raspberries are soft. Remove from heat and let it cool slightly. Then, blend the mixture until smooth and strain through a fine mesh sieve to remove the seeds. Pour the raspberry mixture into a shallow dish and freeze for at least 4 hours or until firm.

Prepare the Cocktail
In a cocktail shaker, combine the frozen raspberry sorbet, Wheatley Vodka, and fresh lime juice. Shake gently to mix the ingredients without completely melting the sorbet.

Serve
Scoop the mixture into a glass and top with Prosecco. Serve immediately with a lime wedge for garnish.
