Mix Dry Ingredients
In a large bowl, combine stone-ground whole wheat flour, brans, and salt. Mix well until evenly distributed.

Form the Dough
Gradually add water, a little at a time, mixing with your hands or a wooden spoon until a soft dough forms. Knead the dough for about 5 minutes until smooth.

Rest the Dough
Cover the dough with a damp cloth and let it rest for 20-30 minutes. This helps in gluten development.

Divide and Roll
After resting, divide the dough into equal portions (about 8-10). Roll each portion into a ball and then flatten it with your fingers. Use a rolling pin to roll each ball into a thin circle, about 6-8 inches in diameter.

Cook the Roti
Heat a tava or non-stick skillet over medium heat. Place the rolled roti on the hot skillet. Cook for about 1-2 minutes until small bubbles form, then flip and cook for another 1-2 minutes until golden brown. You can press the edges with a spatula to ensure even cooking.

Serve
Remove the roti from the skillet and place it in a container lined with a cloth to keep warm. Repeat the process with the remaining dough. Serve warm with your favorite curry or side dish.
