Prepare the Milk Mixture

In a heavy-bottomed pan, bring the full cream milk to a boil over medium heat. Once boiling, reduce the heat and let it simmer until it reduces to about half its volume, stirring occasionally.

Add Sugar and Flavors

Once the milk has reduced, add sugar, cardamom powder, and saffron strands (if using). Mix well until the sugar is dissolved.

Incorporate Heavy Cream

Remove the pan from heat and let the mixture cool slightly. Stir in the heavy cream and mix well.

Add Pistachios and Mango Pulp

For the Malai Pista Kulfi, add chopped pistachios to the mixture. For the Mango variant, fold in the mango pulp instead. Mix until well combined.

Pour and Freeze

Pour the mixture into kulfi molds or small cups. Cover with a lid or plastic wrap and freeze for at least 6 hours or until solid.

Once frozen, remove the kulfi from the molds by running under warm water for a few seconds. Serve immediately and enjoy!
