Sauté the Aromatics

In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Add the minced garlic and grated ginger, and cook for an additional minute until fragrant.

Add Tomatoes and Spices

Chop the ripened plum tomatoes and add them to the pot along with the star anise. Stir well and cook for about 5-7 minutes until the tomatoes start to break down.

Pour in Broth

Add the vegetable broth to the pot, bring to a boil, then reduce the heat and let it simmer for 15 minutes.

Blend the Soup

Remove the star anise and blend the soup mixture using an immersion blender until smooth. If using a regular blender, allow the mixture to cool slightly before blending.

Add Coconut Milk

Return the blended soup to the pot, add the coconut milk, and stir well. Season with salt and freshly ground black pepper to taste. Simmer for another 5 minutes.

Serve

Ladle the shorba into bowls and garnish with fresh coriander leaves before serving.
