Cook the Rice
Rinse the basmati rice under cold water until the water runs clear. In a saucepan, combine the rice with 2 cups of water and a pinch of salt. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until water is absorbed. Remove from heat and let it sit covered for another 5 minutes.

Prepare the Kabobs
Preheat the grill to medium-high heat. Thread marinated shrimp and pineapple chunks alternately onto skewers.
- 4
Grill the Kabobs
Place the skewers on the grill and cook for about 2-3 minutes on each side or until the shrimp are opaque and cooked through.
- 5
Cook the Peas
In a small pot, heat a little water and add the green peas. Cook for about 3-4 minutes until tender, then drain.
- 6
Serve
Serve the grilled shrimp kabobs over a bed of basmati rice with a side of green peas.
