Cooking Instructions

  1. 1

    Preparation of Rice

Wash the basmati rice under cold water until the water runs clear. Soak it in water for about 30 minutes, then drain.

  2. 2

    Cooking the Rice

In a large pot, bring the milk to a boil. Add the soaked and drained rice to the boiling milk. Stir well and reduce the heat to low. Cook for about 30 minutes, stirring occasionally, until the rice is soft and the mixture thickens.

  3. 3

    Adding Sweetness and Flavor

Add sugar and cardamom powder to the rice mixture. Stir until the sugar is dissolved. Cook for an additional 5 minutes.

  4. 4

    Preparing the Nuts

In a separate pan, heat the ghee over medium heat. Add the cashews, almonds, and raisins. Sauté until the nuts are golden and the raisins are plump.

  5. 5

    Combining Ingredients

Add the sautéed nuts and raisins to the rice pudding. Stir well to combine.

  6. 6

    Finishing Touch

Add saffron strands to the kheer, mix gently, and let it simmer for another 5 minutes.

  7. 7

    Serving

Remove from heat and let the kheer cool slightly. Serve warm or chilled, garnished with additional nuts if desired.
