Cholé Preparation

    Prepare the Base

    In a large pot, heat the oil over medium heat. Add cumin seeds and let them sizzle for a few seconds. Then, add the chopped onions and sauté until they are golden brown.

    Add Spices and Tomatoes

    Stir in the minced garlic, grated ginger, and slit green chili. Cook for another minute. Then add the chopped tomatoes, turmeric powder, coriander powder, red chili powder, and salt. Cook until the tomatoes break down and the oil separates from the mixture.

    Combine Chickpeas

    Add the cooked chickpeas to the pot along with the water. Mix well and bring to a gentle simmer.

    Simmer and Season

    Cover the pot and let it simmer for about 20-30 minutes, stirring occasionally. Adjust the seasoning with salt if needed.

    Finish with Garam Masala

    Once the chickpeas are tender and the flavors have melded, stir in the garam masala and chopped cilantro. Cook for an additional 5 minutes.

    Serve hot with rice or flatbreads, garnished with more cilantro if desired.
