    Make the Papdi

    In a mixing bowl, combine all-purpose flour and a pinch of salt. Gradually add water and knead to form a smooth dough. Cover with a damp cloth and let it rest for 30 minutes.

    Roll and Fry the Papdi

    Divide the dough into small balls. Roll each ball into a thin circle. Heat oil in a pan and fry the rolled dough until golden and crispy. Drain on paper towels.

    Prepare the Potatoes and Peas

    In a bowl, mix the boiled and diced potatoes with boiled green peas. Season with chaat masala, salt, and red chili powder. Mix well.

    Assemble the Papdi Chat

    On a serving plate, place a layer of yogurt. Arrange fried papdi on top. Add the seasoned potato and pea mixture, followed by curried chickpeas.

    Add Chutneys and Toppings

    Drizzle tamarind and mint chutneys over the top. Finish by sprinkling sev on top for added crunch.
