Make the Dough
In a large mixing bowl, combine the whole wheat flour and salt. Gradually add water while mixing until a soft dough forms. Knead the dough for about 5-7 minutes until smooth. Cover with a damp cloth and let it rest for 30 minutes.

Divide the Dough
After resting, divide the dough into equal-sized balls (about the size of a golf ball). Keep them covered to prevent drying out.

Roll the Roti
On a lightly floured surface, take one ball of dough and flatten it with your fingers. Use a rolling pin to roll it out into a thin circle, about 6-8 inches in diameter.

Cook the Roti
Heat a tava or non-stick skillet over medium-high heat. Place the rolled roti on the hot skillet. Cook for about 30 seconds or until bubbles form on the surface, then flip it over. Cook for another 30 seconds, pressing gently with a spatula until it puffs up. Remove from the skillet and keep warm. Repeat with the remaining dough.

Serve the roti warm with your choice of curry, vegetables, or lentils.
