Making Naan
Activate Yeast
In a small bowl, combine warm water, sugar, and yeast. Let it sit for about 10 minutes until frothy.
Prepare Dough
In a large mixing bowl, combine flour and salt. Make a well in the center and add the yogurt, ghee, and the frothy yeast mixture. Gradually mix to form a soft dough.
Knead the Dough
Turn the dough onto a floured surface and knead for about 8-10 minutes until smooth and elastic.
First Rise
Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for 1-2 hours or until doubled in size.
Shape Naan
Once risen, punch down the dough and divide it into 6 equal portions. Roll each portion into a ball and then flatten it into an oval or round shape.
Cook Naan
Preheat a tandoor or a cast-iron skillet over high heat. Cook each naan for 1-2 minutes on one side until bubbles form, then flip and cook for another minute until it puffs up and is golden brown.
