    Prepare the Scallops

    Rinse the scallops under cold water and pat dry with paper towels. Season with salt and black pepper.

    Heat the Oil

    In a large skillet, heat the olive oil over medium-high heat.

    Cook the Scallops

    Add the scallops to the skillet and cook for about 2-3 minutes on each side until they are golden brown and cooked through. Remove the scallops from the skillet and set aside.

    Make the Coconut Sauce

    In the same skillet, add the minced garlic and grated ginger. Sauté for about 1 minute until fragrant. Pour in the coconut milk and lime juice, stirring to combine. Let it simmer for 3-4 minutes.

    Combine and Serve

    Return the scallops to the skillet, coating them in the coconut sauce. Cook for an additional minute to warm through. Garnish with chopped cilantro before serving.
