    Prepare the Ingredients

    Chop and slice all vegetables and set them aside.

    Cook the Aromatics

    In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Add the minced garlic and grated ginger, cooking for an additional 1-2 minutes until fragrant.

    Stir in the curry powder, turmeric powder, and salt, cooking for 1 minute to allow the spices to bloom.

    Add Vegetables

    Add the cubed winter squash, sliced carrots, and raw banana to the pot, stirring to coat the vegetables with the spice mixture.

    Add Coconut Milk

    Pour in the coconut milk and bring to a gentle simmer. Cover the pot and cook for about 20-25 minutes, or until the vegetables are tender.
