    Prepare the Vegetables

    Peel and chop the winter squash, carrots, and raw banana into bite-sized pieces. Finely chop the onion, garlic, and ginger.

    Sauté Aromatics

    In a large pot, heat the oil over medium heat. Add the chopped onion, garlic, and ginger. Sauté until the onion is translucent.

    Add Spices

    Stir in the curry powder and turmeric powder. Cook for another minute until fragrant.

    Cook the Vegetables

    Add the chopped winter squash, carrots, and raw banana to the pot. Stir to coat the vegetables with the spices.

    Simmer with Coconut Milk

    Pour in the coconut milk and add salt to taste. Bring to a gentle simmer and cook for about 20 minutes, or until the vegetables are tender.
