    Prepare the Lychee

    In a blender or food processor, combine the peeled and pitted lychee fruit, water, sugar, lemon juice, and a pinch of salt. Blend until smooth.

    Strain the Mixture

    Pour the blended mixture through a fine mesh strainer into a bowl to remove any solids. Use a spatula to help push the mixture through.

    Chill the Mixture

    Cover the bowl with plastic wrap and refrigerate the strained mixture for at least 1 hour, or until thoroughly chilled.

    Freeze the Sorbet

    Pour the chilled lychee mixture into an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency.

    Hardening the Sorbet

    Transfer the sorbet to an airtight container and freeze for at least 4 hours, or until firm.
