    Prepare the Ingredients

    Wash and slice all the vegetables: water chestnuts, bell pepper, carrot, snow peas, and green onions.

    Heat the Oil

    In a large skillet or wok, heat 2 tablespoons of vegetable oil over medium-high heat until shimmering.

    Sauté Aromatics

    Add minced garlic and ginger to the skillet. Sauté for about 30 seconds until fragrant.

    Add Vegetables

    Add the sliced water chestnuts, bell pepper, carrot, and snow peas to the skillet. Stir-fry for about 5-7 minutes until the vegetables are tender-crisp.

    Finish the Stir-Fry

    Add the chopped green onions and stir-fry for another 2 minutes. Season with soy sauce and sesame oil to taste.

    Serve

    Remove from heat and serve the chestnut fry warm, garnished with additional green onions if desired.
