Prepare the Lamb
In a large bowl, combine lamb chops with garlic, ginger paste, cumin powder, coriander powder, turmeric powder, red chili powder, salt, and black pepper. Allow to marinate for at least 2 hours, preferably overnight.

Sauté the Onions
In a heavy-bottomed pot, heat olive oil over medium heat. Add finely chopped onions and sauté until they turn golden brown.

Cook the Lamb
Add the marinated lamb chops to the pot, browning them on all sides. Stir in the fennel seeds and cook for another minute.

Slow Cook
Pour in the water, cover the pot, and reduce the heat to low. Let it simmer for about 2-3 hours until the lamb is tender and infused with flavors.

Add Dill and Serve
Once cooked, stir in the fresh dill leaves. Adjust seasoning if necessary. Serve hot with rice or naan.
