Prepare the Batter
In a large bowl, mix the gram flour, rice flour, red chili powder, turmeric powder, cumin powder, garam masala, salt, and baking soda. Gradually add water to form a smooth batter that can coat the chicken pieces.
Coat the Chicken
Add the chicken pieces to the batter, ensuring they are well coated. Let it marinate for at least 30 minutes.
Heat the Oil
In a deep frying pan, heat oil over medium heat. You can test if the oil is hot enough by dropping a small amount of batter into it; it should sizzle and rise to the surface.
Fry the Pakoras
Carefully drop the coated chicken pieces into the hot oil, ensuring not to overcrowd the pan. Fry until golden brown and cooked through, about 5-7 minutes.
Drain and Serve
Remove the pakoras with a slotted spoon and drain on paper towels. Serve hot with your favorite chutney or sauce.
