    Roasting Garlic and Onion

    Preheat your oven to 200°C (400°F). Cut the top off the whole head of garlic and place it on a piece of aluminum foil. Drizzle with olive oil and wrap it tightly in the foil. Place it on a baking sheet. Peel and cut the onion into wedges, toss with olive oil, salt, and pepper, and add to the baking sheet. Roast for about 30-35 minutes until caramelized and tender.

    Preparing Mushrooms

    While the garlic and onion are roasting, clean the mushrooms with a damp cloth and slice them. In a skillet over medium heat, add a tablespoon of olive oil. Once hot, add the mushrooms and sauté for about 5-7 minutes until they are golden brown. Season with salt and black pepper.

    Combining Ingredients

    Once the garlic and onion are done, remove them from the oven and let them cool slightly. Squeeze the roasted garlic cloves out of their skins into the mushrooms. Add the roasted onions, fresh basil, lemon juice, and grated Parmesan to the skillet. Stir to combine and heat through for another 2-3 minutes.

    Serve warm as a side dish or over pasta. Garnish with additional basil and Parmesan if desired.
