Prepare the Cauliflower

Preheat your wood-fired oven to around 500°F (260°C). Cut the cauliflower into florets, and set aside.

Make the Chili Rub

In a bowl, mix the Calabrian chili paste, olive oil, salt, and black pepper to create a rub.

Coat the Cauliflower

Toss the cauliflower florets with the chili rub until they are evenly coated.

Fire the Cauliflower

Place the coated cauliflower onto a grill or a baking tray suitable for the wood-fired oven. Roast for about 15-20 minutes, turning occasionally, until charred and tender.

Prepare the Blue Cheese Dip

In a bowl, mix the blue cheese and sour cream until well combined. Add salt and pepper to taste.

Serve

Drizzle the hot honey over the roasted cauliflower. Serve with the blue cheese dip on the side, along with pickled cauliflower leaves and julienned carrots as garnish.
