    Cook the Spaghetti

    Bring a large pot of salted water to a boil. Add the spaghetti and cook according to the package instructions until al dente. Reserve 1 cup of pasta water, then drain the spaghetti and set aside.

    Cook the Pancetta

    In a large skillet, heat the olive oil over medium heat. Add the pancetta and cook until crispy, about 5-7 minutes. Remove from heat and set aside.

    Prepare the Egg Mixture

    In a bowl, whisk together the eggs, grated Parmesan cheese, and black pepper until well combined. Set aside.

    Combine Ingredients

    Quickly add the hot spaghetti to the skillet with pancetta. Toss to combine, allowing the heat from the pasta to gently cook the egg mixture. If the sauce is too thick, add reserved pasta water, a little at a time, until desired consistency is reached.

    Serve

    Taste and adjust seasoning with salt and additional black pepper if desired. Serve immediately, garnished with extra Parmesan cheese and black pepper.
