Calamari Preparation

Clean and Cut Calamari
Rinse the fresh calamari under cold water. Remove the head and innards, then slice the body into rings about 1/2 inch thick.

Prepare the Breading
In a large bowl, combine the all-purpose flour, cornstarch, salt, black pepper, paprika, and garlic powder. Mix well.

Beat the Eggs
In a separate bowl, beat the two large eggs until well combined.

Bread the Calamari
Dip each calamari ring first into the egg mixture, then coat it in the flour mixture, ensuring it is evenly covered.

Heat the Oil
In a deep skillet or fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Calamari
Carefully add the breaded calamari rings to the hot oil in batches. Fry for 2-3 minutes or until golden brown, then remove and drain on paper towels.

Sauté Garlic
In a saucepan, heat the olive oil over medium heat. Add the minced garlic cloves and sauté until fragrant, about 1-2 minutes.

Add Tomatoes and Spices
Stir in the crushed tomatoes, dried oregano, dried basil, salt, black pepper, and sugar. Bring to a simmer.

Simmer the Sauce
Reduce heat to low and let the sauce simmer for about 20 minutes, stirring occasionally. Adjust seasoning to taste.
