Cooking Pasta

Boil Water
In a large pot, bring salted water to a boil over high heat.

Cook Spaghetti
Add the spaghetti to the boiling water and cook according to package instructions until al dente, usually about 8-10 minutes.

Reserve Pasta Water
Before draining, reserve about 1 cup of the pasta cooking water. Then, drain the spaghetti and set aside.
Preparing Sauce

Cook Pancetta
In a large skillet over medium heat, add the pancetta and cook until crispy, about 4-5 minutes. Remove from heat.

Mix Eggs and Cheese
In a bowl, whisk together the large eggs, grated Parmesan cheese, and black pepper until well combined.
Combining Ingredients

Combine Spaghetti and Pancetta
Add the drained spaghetti to the skillet with the crispy pancetta and toss to combine.

Adjust Consistency
If the sauce is too thick, gradually add reserved pasta water a little at a time until desired consistency is achieved.

Season and Serve
Taste and adjust seasoning with salt and more black pepper if desired. Serve immediately, garnished with extra Parmesan cheese if desired.
