Panna Cotta Preparation

Bloom the Gelatin
In a small bowl, sprinkle gelatin powder over cold water. Let it sit for about 5-10 minutes until it blooms.

Heat the Cream Mixture
In a saucepan over medium heat, combine heavy cream, whole milk, and granulated sugar. Stir until the sugar dissolves and the mixture is heated through, but do not let it boil.

Add Vanilla and Gelatin
Remove the saucepan from heat. Stir in the bloomed gelatin and vanilla extract until fully dissolved.

Pour into Molds
Pour the mixture into individual serving molds or cups. Cover and refrigerate for at least 4 hours, or until set.
Mixed Berry Topping Preparation

Prepare the Berries
In a medium bowl, combine mixed berries, granulated sugar, and lemon juice. Gently toss to coat the berries.

Let the Mixture Sit
Allow the berry mixture to sit for 15-20 minutes to macerate and develop juices.

Serve
Once the panna cotta is set, carefully unmold it onto a plate and top with the mixed berry mixture before serving.
