Calamari Preparation

Prepare the Calamari
Rinse the calamari rings under cold water and pat them dry with paper towels. This helps remove excess moisture.

Make the Breading Mix
In a large bowl, combine the all-purpose flour, cornstarch, salt, black pepper, garlic powder, and cayenne pepper. Mix well.

Coat the Calamari
Dip each calamari ring into the wet mix, allowing excess to drip off, then coat it in the breading mix. Ensure each ring is evenly coated.

Fry the Calamari
Carefully add the coated calamari rings to the hot oil in batches, making sure not to overcrowd the pan. Fry for about 2-3 minutes, or until golden brown and crispy.

Drain and Keep Warm
Use a slotted spoon to remove the fried calamari from the oil and place them on a plate lined with paper towels to drain excess oil. Keep them warm in a low oven while frying the remaining batches.

Sauté Garlic
In a saucepan over medium heat, add the olive oil. Once hot, add minced garlic cloves and sauté for about 1-2 minutes until fragrant but not browned.

Add Tomatoes and Seasonings
Pour in the canned crushed tomatoes, and add oregano, basil, salt, black pepper, and sugar. Stir to combine.

Simmer the Sauce
Bring the sauce to a simmer and let it cook for about 15-20 minutes, stirring occasionally until thickened.
