Panino Preparation

Prepare the Tuna
Season the yellowfin tuna steaks with salt and black pepper on both sides.

Cook the Tuna
Heat a non-stick skillet over medium-high heat. Add a drizzle of olive oil and sear the tuna steaks for about 2-3 minutes on each side for medium-rare, or until cooked to your preferred doneness. Remove from heat and let rest.

Prepare the Bread
While the tuna is resting, slice the ciabatta bread in half horizontally. You may toast the bread lightly in the skillet, if desired.

Prepare the Mustard Greens and Red Onion
Rinse the mustard greens and pat dry. Slice the red onion into thin rings.
Salted Capers Aioli Preparation

Make the Aioli
In a small bowl, combine the mayonnaise, salted capers, minced garlic, lemon juice, and olive oil. Mix well until smooth. Season with salt and black pepper to taste.
Assemble the Panino

Build the Panino
Spread a generous amount of salted capers aioli on the inside of both halves of the ciabatta bread. Layer the mustard greens on the bottom half, followed by the seared tuna steaks, and top with red onion rings.

Finish the Sandwich
Close the sandwich with the top half of the ciabatta. If desired, press down gently.

Serve
Cut the panino in half and serve immediately, optionally with additional aioli on the side.
