Preparation of Cured Meats

    Slice the Meats

    Using a sharp knife, thinly slice the prosciutto, salami, and capicola into strips or bite-sized pieces. Arrange them on a large platter.

    Cut the mozzarella into bite-sized balls or slices. Grate the Parmesan and cut the Gorgonzola into small chunks. Place these cheeses on the platter alongside the meats.

    Rinse the olives and cherry tomatoes under cold water. Drain the artichoke hearts. Scatter the olives, cherry tomatoes, and artichoke hearts around the meats and cheeses on the platter.

    In a small bowl, whisk together the balsamic vinegar and olive oil. Drizzle this mixture over the arranged platter. Garnish with fresh basil leaves.
