Preparation of Zabaglione

Whisk the Egg Yolks and Sugar
In a mixing bowl, combine the egg yolks and granulated sugar. Using a whisk, beat them together until the mixture becomes thick and pale in color.

Add Wine and Heat
Gradually add the dry white wine to the egg yolk mixture, whisking continuously. Transfer the bowl over a pot of simmering water (double boiler) and continue to whisk until the mixture thickens and doubles in volume, about 10 minutes.

Melt the White Chocolate
In a separate bowl, melt the white chocolate gently over a double boiler or in the microwave in short bursts. Stir until smooth and let it cool slightly.

Combine Mixtures
Once the zabaglione has thickened, remove it from the heat and gradually fold in the melted white chocolate until fully incorporated.
Flavoring and Serving

Prepare the Huckleberries
Rinse the huckleberries under cold water and gently pat them dry. If using frozen huckleberries, allow them to thaw and drain excess moisture.

Add Lime Leaf Oil
Drizzle the lime leaf oil over the huckleberries. Toss them gently to coat evenly.

Serve the Zabaglione
Spoon the zabaglione into serving dishes and top with the huckleberries drizzled with lime leaf oil. Serve immediately while warm.
