Preparation

    Preheat the Oven

    Preheat your oven to 180°C (350°F).

    Prepare the Guanciale

    Dice the guanciale into small pieces and heat a skillet over medium heat. Add the guanciale and cook until crispy, about 5-7 minutes. Remove from heat and set aside.

    Prepare the Tomatoes

    Chop the ripe tomatoes into small cubes and set them aside.

    Mix Ingredients

    In a mixing bowl, combine the chopped tomatoes, crispy guanciale, olive oil, salt, and black pepper. Stir well to combine.

Baking

    Assemble the Dish

    In a baking dish, spread the tomato and guanciale mixture evenly across the bottom. Make four small wells in the mixture for the eggs.

    Add the Eggs

    Crack an egg into each well you created in the tomato mixture.

    Bake the Eggs

    Place the baking dish in the preheated oven and bake for about 15-20 minutes, or until the egg whites are set but the yolks are still slightly runny.

    Add Arugula and Pecorino

    Remove the baking dish from the oven and sprinkle arugula and grated pecorino cheese on top of the eggs. Let it sit for a few minutes to allow the cheese to melt slightly.

    Serve the baked eggs warm, garnished with additional black pepper and a drizzle of olive oil if desired. Enjoy!
