    Prepare the Meat

    In a large mixing bowl, combine the ground pork and pork fatback. Use your hands or a wooden spoon to mix them together until well combined.

    Mix the Spices

    In a separate small bowl, mix together the sweet paprika, red pepper flakes, black pepper, salt, fennel seeds, garlic powder, and cayenne pepper until evenly blended.

    Add Herbs

    Add the chopped parsley and thyme to the spice mixture and combine well. This will add fresh flavors to the sausage.

    Mix Ingredients

    Add the spice and herb mixture to the meat bowl. Use your hands to thoroughly combine all the ingredients until evenly distributed. Ensure the spices are well incorporated into the meat.

Stuffing

    Prepare Sausage Casings

    If using natural casings, rinse them thoroughly and soak them in water for at least 30 minutes before using. If using synthetic casings, follow the package instructions.

    Stuff the Sausage

    Using a sausage stuffer, fill the casings with the sausage mixture. Be careful not to overstuff, as the sausage needs room to expand while cooking.

    Tie Off the Sausage

    Twist the sausages into links of your desired size and tie off the ends securely using kitchen twine.

Cooking

    Cook the Sausages

    Grill, pan-fry, or bake the sausages on medium heat until they reach an internal temperature of 75°C (165°F). This usually takes about 15-20 minutes.
