Method

Roasting the Chicken

    Prepare the Chicken

    Preheat your oven to 425°F (220°C). Pat the green circle chicken dry with paper towels. Rub it all over with olive oil, then season generously with salt, black pepper, and paprika.

    Roast the Chicken

    Place the seasoned chicken in a roasting pan and roast in the preheated oven for about 1 hour and 15 minutes, or until the internal temperature reaches 165°F (75°C) and the skin is golden brown. Baste the chicken with its juices halfway through cooking for added flavor.

    Rest the Chicken

    Once cooked, remove the chicken from the oven and let it rest for at least 15 minutes before carving.

Making Carrot Piri Piri

    Prepare the Carrots

    While the chicken is roasting, peel and chop the carrots into small pieces. Place them in a pot with enough water to cover, add a pinch of salt, and bring to a boil.

    Cook the Carrots

    Boil the carrots for about 10-12 minutes until tender. Drain and let them cool slightly.

    Blend the Piri Piri Sauce

    In a blender, combine the cooked carrots, garlic cloves, red chili flakes, lemon juice, honey, and salt. Blend until smooth and adjust seasoning to taste.

Preparing Garlic Labneh

    Make the Labneh

    In a bowl, combine the Greek yogurt, minced garlic cloves, and salt. Mix well.

    Drizzle with Olive Oil

    Transfer the labneh to a serving dish, create a small well in the center, and drizzle with olive oil. If desired, sprinkle with fresh dill for added flavor.
