    Clean the Razor Clams

    Rinse the razor clams under cold water to remove any sand or grit. Place them in a bowl of fresh water for about 30 minutes to help purge them of any remaining sand.

    Finely chop the red onion, cilantro, and jalapeño pepper. Set aside.

    Segment the Orange

    Peel the orange and segment it into sections, removing any seeds. Chop the segments into small pieces.

    Prepare the Finger Limes

    Cut the finger limes in half and gently squeeze out the pearls into a small bowl.

Ceviche Assembly

    Combine the Ingredients

    In a large bowl, combine the cleaned razor clams, chopped red onion, cilantro, jalapeño, orange pieces, and red currants.

    Drizzle the lime juice and olive oil over the mixture. Season with sea salt and black pepper to taste.
