Dough Preparation

Activate the Yeast
In a small bowl, mix warm water (about 110°F) with active dry yeast and let it sit for about 5-10 minutes until it becomes frothy.

Make the Dough
In a large mixing bowl, combine all-purpose flour and salt. Once the yeast is activated, add it to the flour mixture along with olive oil. Mix until a dough forms.

Knead the Dough
Transfer the dough to a floured surface and knead for about 10 minutes until it is smooth and elastic.

Let the Dough Rise
Place the dough ball in a lightly oiled bowl, cover it with a damp cloth, and let it rise in a warm place until it doubles in size (about 1 hour).
Assembling the Pizza

Preheat the Oven
Preheat your oven to 475°F (245°C) to ensure it’s hot enough for baking the pizza.

Prepare the Sauce
If using fresh tomatoes, chop them finely. If using canned, crush them with a fork. Add salt to taste and mix well. Set aside.

Shape the Dough
Once the dough has risen, punch it down and transfer it to a floured surface. Roll or stretch it out into a round shape about 12 inches in diameter.

Add Toppings
Spread the prepared tomato sauce evenly over the dough. Tear the fresh mozzarella into pieces and distribute it over the sauce. Sprinkle chopped spring onions and fresh basil leaves on top.

Drizzle with Olive Oil
Lightly drizzle olive oil over the top of the pizza for added flavor.

Bake the Pizza
Carefully transfer the pizza onto a baking sheet or pizza stone and bake in the preheated oven for about 10-12 minutes, or until the crust is golden and the cheese is bubbly.

Remove the pizza from the oven, let it cool for a few minutes, then slice and serve hot, garnished with additional fresh basil if desired.
